Apple Pie

Slice 4 peeled red delicious apples

1/2 cup brown sugar, 1/8 teaspoon salt, 1 tablespoon cornstarch, 1/4 teaspoon cinnamon, 1/8 teaspoon nutmeg

Mix over, under, all around apples and let sit.

6 tbs shortening

6 tablespoons butter

2 cups all purpose flour. Cut shortening and butter into flour.

This is what it looks like finally.

4 tablespoons water, mix with hand and form ball. If needed add 1 more tablespoon water. Handle as little as possible.

Cut in half. Preheat oven 450 degrees.

Roll out 9 ” circle. (I like my crust thin, so I make the circle bigger)

Put in pan by placing pan over rolled out dough, and flip over entire sheet into pan.  Roll out second half.

Fill bottom half with apple mixture (pile high in middle and round down to top of crust) and dot with 1 tablespoon of butter.

Top (this one you need align with you pie and slowly roll over/flip onto it) and fold crusts.

Pick air holes with fork. In oven 10 minutes at 450. Then 350 degrees 35 to 45 minutes.

I look at my pie at 30 minutes, 35 minutes, and check color of crust to determine if I need 2 – 5 minutes more.

Enjoy!

If you top your Apple pie with cheese, omit 1/4 teaspoon cinnamon, 1/8 teaspoon nutmeg spices and add 1/2 teaspoon fennel instead.

Crafting Gifts

The Los Angeles Pony and Critter Club hold a Holiday party each year and we do a handcrafted gift.  I have made hot pepper chocolate, pralines, and spaghetti sauce. For two years i painted toy boxes.  This year I am painting something original.  First I plan my paintings in pencil on white paper.  i use the same white paper to protect my dinningroom table while I paint in acrylic.

And these are my finished paintings.  Not exactly what I planned but I think allowing creative impluse to take over is important.  Also, I really like the texture you can make with acrylic.
